Recipe: Granola Cookies
After some tinkering with ingredients, I liked this recipe most. It lets the granola shine while also satisfying the sweet tooth. Depending on the granola you are using, feel free to add nuts, dried fruit or chocolate chips to this recipe. If made with the Coconut Berry Granola, this recipe needs nothing more than what is listed below.
Makes 18 cookies
2 cups homemade granola
1/2 cup whole-wheat flour
1/2 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup butter (1 stick), softened
1/2 cup brown sugar
1/2 cup white sugar
1 large egg
1 teaspoon vanilla extract
Preheat oven to 375 degrees.
Combine granola, flours, baking soda, cinnamon and salt in a bowl.
In another bowl, combine sugars, butter, egg and vanilla, stirring until thoroughly mixed.
Slowly add the dry ingredients into the wet, constantly stirring to combine.
Shape cookies into 1-inch spheres and place on an ungreased pan.
Bake for 15 to 20 minutes or until golden brown.
Place on rack to cool.
