Antique Barn Raisin Bran Muffins

When I was growing up, my mother served bran muffins at every Thanksgiving. I didn't realize this was an atypical holiday side dish until Thanksgiving at my college boyfriend's. His posh stepmother was toasting everyone: "And thank you to Heidi for bringing the (pregnant pause) ... bread." I realized she was embarrassed (or embarrassed for me) to be serving bran muffins. I love them. They are our family's deliciously odd custom.

Makes 48 muffins

Mix together in a very large bowl:

1 20-ounce box of Raisin Bran

3 cups sugar

5 cups flour

5 teaspoons baking soda

2 teaspoons salt


4 eggs, beaten

1 cup butter, melted

1 quart buttermilk

Mix well. Keep in a covered container in the refrigerator. Use as desired. Bake at 400 degrees for 15 to 20 minutes.
