Inside The Matzo Factory

In his latest NYT Magazine column, Adam Davidson looks at the U.S. matzo business. Among other things, he visits two matzo companies: Manischewitz and Streit's.

As the video above shows, there are huge differences between the two. Streit's hasn't upgraded its factory since World War II; Manischewitz has a new, state-of-the-art plant that's two city blocks long.

But the Streit's people say they have a secret weapon that will allow them to survive without innovating: tradition. "As long as they don't change Passover, we have built-in sales," a Streit's exec says.
