Summer Bounty Prompts Preservation Lesson

It's summer, and the garden is overflowing with the bounty of the earth. Gardeners might have so much that they end up making jam from those berries and pickles from the cukes. But how and why do the various food-preservation methods actually work? Salt and sugar play vital roles.
