Special Rice & Green Salsa from Chapalita

This political season, the Los Angeles-based restaurant Chapalita catered a get-out-the-vote block party in the city's Lincoln Heights neighborhood. Below, chef Juan Gomez shares his recipes for Juan's Special Rice and Juan's Green Salsa.

Juan's Special Rice

4 cups white rice

2 tablespoons pork lard or cooking oil

2-3 tomatoes

1/4 onion

1 tablespoon chicken base

1/4 cube margarine

8 cups water

Directions: Brown rice in a frying pan with pork lard. Strain the oil. Add margarine, tomatoes, onion and chicken base. Add 8 cups of water, bring to a boil and simmer for 20 minutes.

Juan's Green Salsa

Start with green tomatoes. Add the following ingredients to taste: jalapenos, cilantro, chili habanero (use with caution) and fresh garlic. (Gomez says he's been making his salsa for so long that he doesn't measure the ingredients. Amounts change depending on "how hot folks want it.")
