Overfishing and pollution in the Caspian Sea have put the caviar-producing beluga sturgeon on the "threatened with extinction" list.

Gourmets are searching for alternatives, and at Sunburst Trout Farm in Canton, N.C. — which bills itself as the oldest fish farm east of the Mississippi River — rainbow trout caviar is drawing a lot of attention.
