If you've been in a supermarket lately, you may have noticed this.
Mr. CHRIS HORSEMAN (Director and News Editor, Agra Informa): Prices are shooting up for virtually every dairy product you care to name.
MONTAGNE: That's Chris Horseman of Agra Informa, a company that tracks food commodities. Dairy prices have been rising fast - not just in the U.S., but around the world. Even for a product as local as fresh milk, the global market comes into play, as NPR's Emily Harris reports.
EMILY HARRIS: The first squirts of evening milk from cow number 41 wet the concrete floor of a dairy farm near Germany's northwest coast. Then number 41 is hitched to the tubes of a milking machine, and its automatic pull sets in.

HARRIS: This August, this cow's owner, Jan Hausmann, got about 10 U.S. cents more for each liter of milk than he did in August of last year. With 650 cows altogether giving about 8,000 liters of milk a day, that adds up.
Mr. JAN HAUSMANN (Dairy Farmer, Germany): (Through translator) It's a good thing for us. It started in June, and it also looks good for next year. We won't be rich, but we will do better business.
HARRIS: He sells his milk to a dairy processor, where it's packaged to drink, made into butter, pudding or this. Few people think of skim-milk powder shaking out of a massive metal machine into white collection bags when they look at the sticker price on a gallon at the supermarket. But skim-milk powder is used in a wide range of foodstuffs, and its price has shot up to record levels worldwide - almost twice as high as last year.
Hans Holtorf owns the German dairy manufacturer, Frischli.
Mr. HANS HOLTORF (Owner, Frischli): (Through translator) Milk powder prices increased first. Then retail prices went up. Then, suddenly, there was a butter shortage - cheese went up. And by now, prices for wholesale products have also gone up. The question is, how long this will continue?
HARRIS: Fresh milk is still a very local product. It can't be transported well from Germany or Iowa to China, for example, where demand for dairy products is rising. But powdered milk, cheese and butter, can easily be moved around the globe. And as their prices rise, analysts are watching to see if dairy producers change their mix of products.
Agra Informa's Chris Horseman says if a lot of producers chase the high price for milk powder, that could affect the cost of everything else.
Mr. HORSEMAN: That means there's going to be that much less milk available to cover any other uses. Which means that whether it's liquid milk or whether it's cheese or whether it's yogurt or whatever, the price gets pulled up right across the board because there's only a finite amount of milk.
HARRIS: Agricultural economists say the milk shortage now is basically a case of low supply and high demand worldwide. Supply is down for many reasons: the bad drought in Australia, drying up the grass cows there eat. New export taxes on milk from Argentina, an attempt to keep food prices there under control. A quota system in Europe still limits production. And the U.S. and Europe always used to have spare dairy products to sell off cheaply around the globe. No more, says market expert Erhard Richarts.
Mr. ERHARD RICHARTS (Head of Dairy Section, Zentrale Markt und Preisberichtstelle, Germany): In the European Union, we used to have surpluses, and all these stocks have been sold out. Milk powder already - it's over a year, and the last butter has been sold in April, from stocks. And immediately prices went up.
HARRIS: Warehouses in Germany and elsewhere that were once full of frozen butter are now empty or chilling frozen pizzas or peas. So where is all this demand for dairy products coming from? Europeans and Americans are eating more cheese. And Torsten Hemme of Germany's IFCN Dairy Research Center says overall demand for dairy is growing in the Middle East and Asia.
Dr. TORSTEN HEMME (Founder and Director, International Farm Comparison Network Dairy Research Center): Chinese per capita consumption is increasing. People get richer in the world. And if people get richer in the world, they like to drink more milk.
HARRIS: Experts say the high price of animal feed because more crops are going toward biofuel is pushing up the cost of milk some, but none of these trends explain why dairy prices really shot up in early summer.
Agra Informa's Chris Horseman says the dairy industry may have just suddenly spooked.
Mr. HORSEMAN: There was certainly an element of panic buying, I suspect, as the processors suddenly thought, wow, there is a real possibility that after years and years and years of surpluses, we might actually not have enough milk to meet our needs. So we better make sure that doesn't happen.
HARRIS: Production has already started to increase in the U.S., but many market watchers say long-term trends could mean milk won't be bottoming out again any time soon.
