Menudo consists of tripe and hominy in a spicy red chile broth and is a tradition during the Christmas season among Mexicans. My mom only makes it during the holidays. I live in New Mexico, and it's fairly common in restaurants, but it's never the same as my mom's. She places just the right balance of the tripe, hominy and red chile that makes it so flavorful. When you grow up with it, it's one of the best comfort foods.
